The Best Banana Nut Bread, Ever.

I have always loved to bake. It used to be my non discript way of getting out of afternoon homework. “Mom, let’s bake!” How can you say no to that quality time together? This is a favorite I have been playing with for years, and got it just right. Enjoy!


1 3/4 cups all-purpose flour

1 1/2 cups sugar

1.5 cups walnuts, in halves

2 ripe bananas, mashed

2 eggs

1/2 cup avocado oil

1/2 cup buttermilk

1 teaspoon baking soda

1 teaspoon vanilla

1/2 teaspoon salt


Preheat over to 325 degrees on bake. Grease loaf pan. Mix all of the ingredients in a large bowl and mix well until combined. Pour mixture into the loaf pan. Place in oven and bake until the top is golden brown. Check bread at 1 hour and 20 minute mark. Use a skewer to check doneness. I usually bake for 10 -20  additional minutes to get desired consistency.


Makes 1 9 x 5 inch loaf

Nuts: I like a nutty banana bread, so I use whole, halves. You can adjust the nut ration however you like- smaller pieces, less nuts, no nuts.

Oils: I used Avocado Oil in the recipe, but Canola oil and vegetable oil also work well.

Buttermilk: The secret to this recipe is buttermilk. I have found the more you add the longer the bake time. If you cut buttermilk, bake for less time.
