In the Keto Kitchen: Rhubarb Sauce

I love rhubarbs. When I find them, I snatch them up and go straight to the kitchen. When I started following Keto principles in my diet, I was excited to learn that Rhubarb is low in carbohydrates- 1 stalk has 2.3 carbs.

Here is the recipe to my everything Keto Rhubarb sauce. Try on ice cream, in a cocktail, or paired with cheeses. Sweet, sour, delicious. Enjoy!


2 Rhubarbs, cut in 1 inch pieces

1/2 cup water

Juice of half a lemon

Lemon Peel, optional

4 tablespoons Lakanto Classic Sugar



Add all ingredients to a small saucepan over medium heat. Bring to a boil and cook for 15 minutes or until the Rhubarb has become a stew-like consistency. If you added the Lemon peel, discard at this time.


This recipe can be made with regular sugar, honey, maple syrup, or any other desired sweetener.

If you use the sauce for ice cream or spreads with cheese, reduce into a thicker more chutney-like consistency. If using for a cocktail, leave thinner so you can strain the rhubarb and use the juice for the cocktail. You may need to add a bit more water to loosen as you cook it based on desired consistency and use.
