In the Keto Kitchen: Keto Chia Seed Pudding

A favorite snack with a Keto twist. The creamiest chia pudding you will ever have.


1 can/ 13.5 oz organic coconut milk

1/4 cup black chia seeds

1/2 tsp vanilla extract

1 tbsp Lankato Monkfruit sweetner

pinch of salt



Add all ingredients of a bowl. Whisk well to combine. Cover and refrigerate for at least 5 hours. I let it set overnight and enjoy the next day.

Topping suggestions: Butterfly nut butter, toasted, unsweetened coconut flakes, toasted slivered almonds, a few fresh berries, blackberry compote.


I usually mix directly in my tupperware container since that is where I will store it in my fridge.

I love almond flavor, so I often add 1/4 almond extract with the vanilla extract.
