Brie and Plum Toast with Maple, Chile Oil


1 slice Sourdough Toast


Triple Cream Brie Cheese

Plum, sliced. I used Black Plum.


Lemon Zest

1 tsp Chives, Chopped

Shallot, sliced

Lemon Juice

1 tbsp Chili Oil

1 tbsp Maple Syrup



On medium heat, melt a pad of butter in a saute pan. Once melted, add the slice of Sourdough toast. Cook until golden brown on both sides. Remove from pan. For the toast toppings- first, add 2-3 slices of Triple Cream Brie as the base layer. Then add 2-3 thin slices of Black Plum. Next, sprinkle the toast with the chopped chives, a sprinkle of good salt, 2-3 thin slices of shallot, 1 grate on the micro plane of lemon zest and a squeeze of fresh lemon juice. In a bowl, mix together the maple syrup and the chili oil. Drizzle the desired amount on the toast. Enjoy!



This could be made with any ripe stone fruit. I chose Black Plum because I love plums and for the color.
